Piedmontese

Piedmontese get their name from the Piedmont region in Northwest Italy. This breed evolved to live in the rugged alpine environment where they grazed the mountaintops in summer and the valleys in winter, making this breed a perfect choice for Wisconsin!

Piedmontese are unique in the fact that they are the only cattle in the world to have a special inactive myostatin gene (C313Y) which causes double muscling. Calves are born slender, long, and fawn colored. This begins to change at the 2 week mark when their inactive myostatin gene begins to express changing their coat color to grey/white and their beef quality to world renowned tenderness.

Piedmontese Beef is different compared to the status quo beef in the U.S. Big Ag has pushed the idea that quality beef only comes from well marbled animals, a fact that has consistently been proven wrong over the years. Marbling has no bearing on a steak's tenderness, this is why steaks in the store have such inconsistent taste.
